Why Hawaii winemakers buy California fruit

Ocean freight is too slow for fruit, so Hawaii ships by air. Frozen must and juice pails carry their own cold and arrive in the best condition; fresh clusters are possible but expensive and must be booked well before the pick.

Locally, Hawaii plantings run to symphony on maui; effectively no vinifera.
