Why Hawaii winemakers buy California fruit
Ocean freight is too slow for fruit, so Hawaii ships by air. Frozen must and juice pails carry their own cold and arrive in the best condition; fresh clusters are possible but expensive and must be booked well before the pick.
Locally, Hawaii plantings run to symphony on maui; effectively no vinifera. That is a different palette from what we grow — our fruit comes off Lodi, Napa, Sonoma, Paso Robles, and Sierra Foothills blocks, so you can make a varietally correct Cabernet Sauvignon, Zinfandel, or Petite Sirah without waiting on a vineyard that will never ripen it.
