Why pH matters more than TA

Good winemaking is applied chemistry you can taste. This article unpacks microbial stability and SO2 efficiency and translates it into decisions you can make with the equipment already on your bench.

Start with the mechanism. Understanding why something happens tells you which lever actually moves it — and stops you from treating a symptom while the cause keeps working in the background.

Then look at the numbers. pH, temperature, free SO2 and dissolved oxygen are the four dials that govern almost every microbial and chemical process in a small cellar. Measure them on a schedule and most surprises disappear.

Small vessels behave differently from commercial tanks. Surface-area-to-volume ratios are worse, temperatures swing faster, and a quarter-inch of headspace in a carboy is proportionally far more oxygen than the same gap in a 500-gallon tank.

Where a correction is needed, run a bench trial, document the addition, and re-measure after 24 hours. Two identical wines treated differently teach you more in one vintage than a decade of reading.
