Pre-harvest cellar prep in eight weekends

Winemaking runs on a calendar you do not control. This piece covers equipment, sanitation and cold storage so you can be ready before the phone call comes.

The single biggest predictor of a good home vintage is preparation. Fruit availability moves with the weather; the cellars that get the lots they want are the ones that reserved early and were ready to receive on 48 hours' notice.

Build a checklist and keep it in the cellar, not on your laptop. Vessels cleaned, hoses replaced, chemicals in date, scale calibrated, cold storage cleared. Every item you cross off in advance is an item that cannot derail your pick day.

Think in weights, not vibes. A half-ton of red grapes fills roughly two 60-gallon fermenters and yields around 30 cases. Know your vessel capacity before you commit to poundage, and leave 20 percent headspace for the cap.

Coordinate with other winemakers. Splitting a full lot with a club or a neighbor gets you better fruit at a better price and gives you a second set of hands on the day it matters most.
